I'm back! Got food at the store, finished dinner & planning on having a quiet evening. I stir-fried some chicken in coconut oil and added my leftover masala sauce to it, simmered for about 30-45 minutes thickened it up nicely. I also added more spices--salt, my new Penzey's pepper, turmeric, garam masala, cayenne pepper, cinnamon. It tastes MUCH better than the first time!
I got lots of produce at the store, so I'm excited for a big salade for lunch tomorrow! Right now I'm going to turn on the kettle for some tea and read my book. Have a good night!
