Stash Tea & chicken dinner

Are you having a good weekend so far?

There was a nice breeze blowing earlier today, so we turned off the air & opened up the windows. I'm paying for it now after turning the oven on to make dinner!! At the store I was browsing the sushi counter & found these cute little rolls!

This is a smoked salmon salad roll in tapioca paper. I have never heard of tapioca paper, but it was a delicious light lunch! I LOVE sweet chili sauce :)

I was surprised to find Stash Tea at the commissary, so I got two interesting looking flavors. I'll try the white chai tonight after it cools down a bit around here.

For dinner I marinated chicken in my Trader Joe's Island Soyaki sauce. It turned out perfectly!

Served with sautéed onions & mushrooms

with roast brussel sprouts on the side.

I made mashed potatoes and corn for the husband. This was a great dinner, even though I heated up the house until God knows when, it was totally worth it!! Now I'm going to try to cool off and have some Leinenkugel's Berry Weiss later on.

Meg - do you recall what brand the tapioca papers are? I want to try them!

Holly it was a premade thing at the sushi counter, I'm sorry I don't know! I've never even seen tapioca paper let alone know what the packaging looks like--hopefully the interwebs will be able to help you! :)
