Good morning folks! I didn't get a chance to update last night, the husband and I went on a four mile walk on the trail. It was great except for the surprise thunderstorm that soaked us on the 2nd mile.
Here's yesterday's lunch: a delicious salade with spinach, cucumber, carrots, tomato, green onion, bacon, green olives, artichokes, hard boiled egg, pecans & almonds with olive oil & red wine vinegar.
Before we went to the trail, I made the fixin's for my chicken soup.
I roasted some veggies in the oven
And set the soup to simmer
It may look a little oily, but that's okay because it's completely Paleo/PB! I meant for the zucchini to go into the soup as well, but my pot was just not big enough!
I had a bowl of roast zucchini and a hard-boiled egg for dinner.
Since I'll be in court all day today, I needed to eat a real breakfast.
Tomato omelet with avocado!
I just love avocado and it seems that Aldi always has the best ones! I also made a green monster but added some frozen berries.
The berries really brightened up the flavor and makes the GM look like a thick dark chocolate shake!! :)
I'm bringing a snack with me to court just in case I get a chance to eat it.
Who knows what lunch will be and what time we'll get out of there! It's going to be a busy, stressful day! Hope you all have a good one :)
