We have air conditioning!!!!!!!

It is below 80 degrees in the house!!!! YAAAAAAY!!!!!

I'm so happy the repairman was able to fix the machine, it was the capacitor or something. We were in court all day, I got an Americano from Starbucks and we didn't get lunch until around 2:30pm.

I got Cantonese chicken with fried rice, again not Paleo, but that's okay since it's not very often that I get Chinese food. I could've gone against the rice, but when you haven't eaten for hours, your brain just kinda shuts down!! I haven't totally given Intermittent Fasting a fair shake yet, so maybe court days will be better after I've got more fasting experience under my Paleo-belt!!


Tonight, we are in for a *treat*!! The husband and I are going to the Mongolian grill with some guys from his unit for a.....wait for you know what I'm going to say??? ;)




Boys and their need to competitively shovel massive amounts of food down their gullets! It should be nothing less than entertaining! I'll be able to stay Paleo, probably just going to have a small bowl of meat & veggies. I'm just sitting here revelling in my nice cool house before it's time to leave!!!! :)

Busy day ahead

Good morning everyone!

How are you today? We still are without air conditioning, but I've been given the go ahead to call the A/C repairman thank goodness!! I had a late dinner last night and kept it simple--leftover beef and cucumber salade.

It was cool enough to sleep last night, but I kept waking up for silly reasons--the cat being most of them. :) This morning I got to sleep in just a little bit since I'm going to be in the courthouse all day, but I've got to get moving! I made a hearty breakfast of eggs & bacon.

MMMMMM CRISPY BACON!!! :) I'm going to get ready now so I have enough time to grab an Americano before court.

How's your Wednesday going so far??

I'm having an okay day, pretty uneventful so far. For breakfast I made an avocado omelet with some salsa on top.

It was very good!

My friend Stella and I decided to grab some sushi together for lunch. We went to our usual spot and we both got the lunch special with soup & salade.

Mine came with Cali rolls and assorted sushi, Stella's had Cali rolls & salmon/cream cheez rolls.

I think we're going to try a different sushi place the next time we go b/c both of our fishies tasted just a little bit off. I'm doing my best to keep my mind off my stomach and may have to hit up Baskin Robbins this afternoon to wash out that fish taste!!

Leftovers & ice cream

Hi guys :) This is going to be a quick post as it's almost bedtime--YAAAY! :)

I got a fair amount of work done today but was just not motivated at ALL! It's so hot outside & I think I need a vacation. Since my car is finally finished I got to come home for lunch today and sauteed shrimp in coconut oil. I put the shrimp on top of sole with tomatoes and some broccoli.

It was okay, the best part was the shrimp of course! :) Since it's so hot out, I didn't want to heat up the kitchen so I made some nice cold cucumber salad. It made a nice little dinner with my roast beef.

After dinner I made a run to Baskin Robbins :) This is a scoop of Outrageous Oreo and boy oh boy it was pretty nomular!!!!

Pretty soon after that, a HUGE thunderstorm came and it just now stopped raining. Perfect sleeping weather, so I wish you goodnight & I'll see you in the morning!!

Ahhhh sleeeep!

Morning everyone!!!

I had a GREAT night's sleep and am feeling fabulous now!! It just goes to show when you take care of your body, your body takes care of you back.

Last night I made a quick dinner of sautéed onions & mushrooms, roast zucchini & yellow squash with roast beef.

The beef was cooked in the crockpot on Sunday and flavored with soy sauce, Worcestershire, salt, pepper & garlic.

After an AWESOME night's sleep :) (I think it's because it rained yesterday evening and really cooled down my house) I woke up again at 5am for Crossfit.

Today's WOD:

3 Rounds for Time in teams

50 wall ball (I used 14lb ball)

50 pushups
I was paired up with John so we split the 50 pretty evenly. It was a great workout!!!

You can tell by my sweaty-self!!

I drank a green monster in the car and whipped up some eggs with sausage & mushrooms to eat later on this morning.

I've got my white-green fusion Stash tea ready, so it's time to get to work!!

Happy Humid Monday

How are you today?

I'm not happy to report that our A/C unit is officially broken!! We spent the whole day yesterday with the windows open and fans on, thank goodness there was a breeze!!

I got over to the trail yesterday morning and walked 8 miles. It was great to get out there again and I got a lot of thinking done. For breakfast I made some hazelnut-flax-blueberry pancakes.

I used:

1/2 cup hazelnut meal
2 T flax meal
1/4-1/3 cup coconut milk or cream
1 egg
vanilla extract

Mix the first six ingredients together to reach a pancake batter consistancy.

Pour onto a hot oiled griddle (I used coconut oil) and drop blueberries on top.

Cook on medium heat 2-3 minutes per side and enjoy!!

This was an AWESOME breakfast and I wasn't hungry for a long time. The rest of the day I did laundry and tried not to overheat while watching more Shameless. I had some leftover shepherd's pie for dinner (not pictured).

Today I woke up early--hello 5am!! to help the husband wake up for PT. He's been on leave for the past month, it's hard for him to wake up early, especially Mondays! I did a bit of tidying since I wasn't able to do any housework in the heat over the weekend. I made some eggs & sausage, but packed them to eat here at work just because it was too hot to eat!

I'm also trying a new tea flavor from Stash!

My car should be ready to be picked up today--YAY!!! This meant I got a ride into work from Stella and packed my lunch. Spinach salade with carrots, tomatoes, cucumbers, green onions, strawberries, blueberries, bacon, balsamic vinegar & olive oil.

I've got quite a bit of work to do today, nothing major I hope to get it all done today!

Hot & Cold

Are you having a good weekend?

Things are pretty quiet around here, as usual!

Friday I thought my car would be finished, but the shop called and it won't be ready until Monday. So I had to stay at work through lunch and got a lot of organizing & old work sorted out. For breakfast I had a green monster

I packed some homemade sausage & the last of the leftover roast beef (neither are pictured) along with my leftover salade

It was a nice little lunch! When I got home after work, I was very disappointed to walk in the door. There was something wrong with the air conditioning!! I'm not sure if it was just having an issue because of being overworked this summer, but it kinda just stopped working.
So we headed out to Buffalo Wild Wings to get out of the hot house and saw this Chinook helicopter on the way. Just one of the perks of living in a military town :)
We got some Caribbean jerk flavored wings and OH MAI these were good!

The flavor was right on and then....BAM!!! Your mouth gets smacked with the heat! They were very tasty :) After a couple more beers, we got a buffalo ranch chicken wrap to share and I must've forgotten to take a pic :)

Saturday the husband got the A/C to work!! There was something stopping the fan from spinning, so he got it to spin again and it started to cool down in here! YAAAAY!!! But then a few minutes later it stopped. BOOOO! I decided to just go about my day and not worry about it. I made some breakfast out of sausage & eggs and went about my day.

I ran some errands, went to the grocery store, got my eyebrows done--they were horrible! I hadn't gotten them done since May when I went to Pittsburgh to run the half-marathon with Soly! When I got home, the A/C was magically working again!! The husband said it was never broken-broken, but worn out from working so hard on these hot days. I feel much better now that it's not broken. :)

For dinner I made a shepherd's pie, which was TOTALLY scrumptious!!!

Not entirely Paleo, but that's okay because it was so good!! I used a pound of ground beef, onion, carrots, zucchini and a packet of mix that I found in the British section of the store. We hung out in the house last night drinking Honey-Berries and watching Shameless.

This morning I made myself a delicious little green monster

I'd like to go over to the trail today, but I need to get going if I'm going to beat the heat! I'm also going to make a roast beef in the crockpot and another batch of egg salade later today.

It's Honey-Berry Time!!

What a day!

I have been oh so busy today it's not even funny! Things were coming at me from 20 different directions today but I handled everything like a PRO! :) For lunch I made a big salade with some shrimp
I only ate half of it--I just remembered that it's leftover in the fridge! I'll have to eat it for lunchies tomorrow.

Brutus was snugglin' on me somethin' fierce at lunch! I'm sure it had nothing to do with the shrimp in my salade ;)

I went to Crossfit after work and it was JUST what the doctor ordered!! We did 7 rounds for time of:
100 meter sprint (I just ran b/c of my stress fracture)
7 kettle-bell swings (16kg)
7 diamond sit-ups
I finished in 12: 19? I think. It was a good workout!! Short & sweet :)

I got home, showered and cracked open a couple of Leinie's to make a Honey-Berry!! It's just a mix of Honeyweiss and Berryweiss and a BIG winner in my book! :)

For dinner, I had some butterfly pork chops marinating in my Trader Joe's Island Soyaki, which (as usual) didn't disappoint! I swear this stuff makes EVERYTHING delicious!

Roast zucchini, yellow squash & onion accompanied my little piggy chop.

Looks pretty tasty, huh?? :)

I'm going to sit here and veg out in front of the tv with another Honey-Berry!

How are you so far? I am going to have a great day, anything can be better than yesterday! I planned on going to Crossfit this morning, but decided that sleeping in would be better ;) I'll head over there tonight after work for a torture session.

Last night I had leftover pot roast & made some roast brussel sprouts.

This morning I made myself a VERY green monster!

What an exciting afternoon!

I was forced to take an extremely late lunch because of a situation at work. The short story is that one of my clients started acting up, he wouldn't leave the premises, the police were called, he resisted arrest & ended up in jail! I had to wait with the child & mother until their ride came so I didn't get to eat until after 2pm.
I made a quick salade

With spinach salade leftover from yesterday, dried cherries & cranberries, pecans, ham & turkey lunchmeat and some cheddar cheese. It was a nice light lunch and fast to whip together. This evening I need to clean up the kitchen from neglecting it this morning and make up something for dinner.

Ugh what day is it?

Good morning--I am so tired today!

And was tired yesterday for that matter, I don't know why I'm not in the swing of things here this week. I got a horrible night's sleep Monday night and I woke up late this morning! UGH! Anyways, I left my mini-USB here at the office and wasn't able to post last night

For lunch yesterday I made an overcooked piece of salmon (booo!)
and a big salade with spinach, carrots, celery, cucumber, tomato, olives, artichokes, cheddar cheese (just a tad) and vinegar & olive oil.

After work, I started making THREE DOZEN paleo bars for my Crossfit folks. By the time I finished all of that, plus making a run to the grocery store for more almond butter, cleaning up the kitchen and making nutritional labels it was 10:30!! I had a piece of roast beef for dinner (not pictured) and went straight to bed!

This morning I tried to wake up early but it just didn't happen :( I made a green monster before delivering the paleo bars.

I have some of my homemade sausage to eat this morning along with my pomegranate tea!

Charlotte's Web

Morning folks!

Excuse me for being MIA the past few days, I felt the need to relax all day Sunday and was quite busy yesterday at work organizing my office & wasn't able to post.

We have a new pet spider!

We found her on Saturday night, isn't her web interesting? I couldn't get a great shot of it in the dark but I'll keep my eye on it. Sunday I made a green monster for breakfast to cure my little hangover :)

It worked like a charm! I cooked up another batch of my homemade sausage.

It's much tastier than last time--I used more spices and added some red pepper flakes to the recipe.

I made a roast beef in the crockpot again on Sunday and ate that for dinner by itself.

Monday was a copycat pretty much of Sunday--green monster & sausage for breakfast, beef for lunch. I wasn't all that hungry in the evening so I had some egg salad.

Pretty boring food the past few days!! Hopefully today's lunch will liven things up around here--that and my new tea!

THIS IS MARVELOUS!!! It's so good, I want to run to the store right now & buy all the other flavors! The taste and fragrance are deeper than the Lipton green tea with pomegranate. It contains Matcha which is the jade colored fine powdered green tea used for centuries in the Japanese tea ceremony. It is made from a special shade-grown Japanese green tea, which is hand-picked and the tea leaves are ground into a fine powder. Matcha is antioxidant rich, as the entire tea leaf is consumed. So there you have it! If you have this store in your grocery store, I highly recommend you try it out!
