Another non-Paleo, but healthy lunch

I'm slowly making my way through stacks of paperwork! Here's my lunch of curried lentils & broccoli.

Here's the recipe:

Bring to a boil and simmer 20 minutes:
1 c. lentils
2 1/2 c. water
2 beef bouillon cubes (I used chicken instead)
1 bay leaf
1 t. salt

Curry sauce:
Saute together:
1/4 c. margarine or butter
1 large onion, chopped
1 clove garlic, minced (I used 2)
Add:
1 t. salt (may want to skip- salt in the lentils is probably enough)
1-2 T. curry powder


Fry briefly. Combine with lentils and:
2 T. lemon juice
Chopped parsley
Serve over rice (or nothing if you're doing Paleo/PB)

**So that's the original recipe, I added some carrots & tomatoes to the sauce to give it some OOMPH!

Having some raw veggies for my afternoon snack (and quite possible a Diet Coke!) :)

Back to the old grindstone! Have a good afternoon! I'm excited about dinner, chicken with vodka sauce and brussel sprouts!
