After giving me this cute little gift, Stella treated me for lunch at the Spa Café next door. I ordered the "spa gourmet salade" which consisted of: mixed greens, crisp romaine with sliced strawberries, mandarin oranges, dried cranberries, chopped pecans, bleu cheese crumbles and grilled chicken breast with chunky bleu cheese dressing.
It was quite good and very satisfying for an impromptu lunch date! I worked late tonight and had leftovers for dinner. This is the last of the chicken, I'm making chicken soup for tomorrow's dinner out of the carcass.

2 cups spinach, 1 cup almond milk, 1 banana, 29g protein powder, 1 scoop wheatgrass, 1 scoop green superfood, vanilla & cinnamon, 1 T coconut oil
My morning snack consists of carrots, a hard-boiled egg and 1 oz of pecans & almonds.
I'm sipping on some cranberry-blood orange tea--NOM!

I've always loved omelets ever since I was a little kid, especially with mushrooms. I remember my dad cooking & I'd always sneak some of the raw mushrooms as he was slicing them. :)
I fried up my mushrooms & eggs in bacon grease (nom) and it was pretty good! I don't have much else planned for the evening, I've got Crossfit in the morning so it's best to go to bed early. Hope everyone has a good night!
And the superstar of my day!!
A huge nom salade with spinach, cucumbers, tomato, green onions, artichokes, green olives, avocado and roast chicken with olive oil & vinegar. It was spectacular! :) Have a great afternoon everyone!

We went to the trail and covered about 5 miles before my old stress fracture in my foot started hurting. We spent the last 3 miles at a much slower pace. I showered & made lunch for us :)

I am really loving the fact that I can eat bacon on Paleo! :) I got a headache after our walk (probably from the 90+ degree heat) so I took some Tylenol and went to bed for a nap. When I got up it was time to start dinner.
I made mashed potatoes and corn to go on John's plate, here's my plate. I stuffed the carrots & some onion inside the chicken.
It was very good! Nice and moist and the skin was deliciously crispy. I'll be able to make soup out of the carcass and that makes me happy because I love making soup. And it's much more flavorful when you use meat bones. Anyway, I hope everyone has a good night! :)
Last night we had a good time, we went to dinner at the Mash House and sat in the bar area. I was very surprised that it wasn't crowded AT ALL! At 7pm on a Saturday night! Where was the party and why were we invited?? :) Anyways, we love the Mash House and I haven't been since my parents came down here last November. I got one of their seasonal beers--a kristallweizen--which I had never heard of, but it was pretty good! Had the house salad with pomegranate vinaigrette, it was very tasty! The combination of the fruity dressing with the pecans was great.
Oh and this bread!! I just HAD to have a piece! Even after my salade, it was still piping hot! I think it's flavored with tarragon and the outer crust is just so good.
I got the 8oz sirloin with asparagus for dinner. It was very thick and cooked perfectly! :)
We ended up skipping the movie and went straight to Paddy's to play pool & shoot darts. John beat me at pool, but I made up for it in darts! :) Paddy wasn't playing last night, but he was there for a good bit before the band came on, so it was good for John to talk to him. I guess Paddy's going home to Ireland in a few weeks and they were talking about the situation over there. Which I'm guessing is the sucky economy just like everywhere else in the world today.

1 frozen banane
1 cup chocolate milk d'amande
1 spoonful flaxseed
2 cups épinards
1 scoop wheatgrass
1 scoop grass clippings
vanilla & cinnamon
After breakfast, we headed up to Post and took a spinning class. Yes the husband came with me again this week! :) It was a good class, not my favorite instructor, but it's lots of fun to work out with the husband. I saw one of my friends there and I hope we can get together soon!
We took our sweaty selves to the commissary and I stocked up on beef, chicken, veggies & coconut oil. I'm going to use the coconut oil for cooking things on high heat, some people put it in smoothies or use it as lotion. We'll see how it works with cooking before I slather it all over my body.
I made BLT sandwiches for the husband and a nice salade for myself. It tasted amazing! And was totally Paleo/Primal :) Ingredients: spinach, tomato, cucumber, green onions, mushrooms, hard boiled egg, avocado, Smithfield bacon (NOM) olive oil & vinegar.
Doesn't that look delicious?!!?! I did laundry & cleaned up the kitchen and have mopped all hard surfaces in the house (I did vacuuming yesterday) so the house is all nice & tidy! :) I'm going to weed the front garden before jumping in the shower to get ready for our date. We're going to dinner & a movie and then out to drinks somewhere. Or maybe just back to the house to have beers in front of the firepit.
I'm thinking of seeing the Hangover or Away We Go. I think the Hangover would be hilarious and I know the husband would like it. Away We Go, I'm not sure exactly what the movie's about, it looks good, but I don't think he'd really like it. BUT they serve alcohol in the Away We Go theatre and at no other theatre in town. We'll see what happens!! Have a great afternoon everyone :)

I ended up saving my morning snack/salade for lunch since I wasn't hungry--I'm trying to listen to my body's hunger signals rather than my mouth wanting to eat! I cooked some chicken on my Lean Mean Grillin Masheen otherwise known as the George Foreman Grill.
Cut it into bite size chunks & put it on my salade.
Y'know since I started having green monsters for breakfast I have been eating SO much spinach that I don't eat salades anymore. This salade was so good I'm going to make a point to have a salade more often! :) I won't be posting again until tomorrow, doing IF for dinner. We are going to the store this evening so I'll be able to cook some good food tomorrow! :) I may make kababs on the grill or a roast chicken wrapped in bacon. You'll just have to tune in to find out! This morning I woke up after a totally AWESOME sleep (the husband turned the air conditioning down so we were nice & cool!) I made another totally awesome green monster and used:
1 cup hemp milk
1 nice spoonful beurre d'amande
2+ cups épinards
1 scoop wheatgrass
1 scoop green superfood
vanilla & cinnamon
1 cup ice
Doesn't that look GOOD! Well it was. Totally delicious. I also had a tiny paleo bar (not pictured). I tried the IF (intermittent fasting) last night and it didn't really work--I snacked on 4-5 of the paleo bars! So I'm going to try the IF again tonight.
Morning snack consists of 1 oz nuts--pecans & macadamia nuts.
Here's the bag of poisonous grains that I got rid of!!!
I feel better, my pantry & freezer are nice and cleaned out now! I may make some beef jerky sometime within the next two weeks. A note to self--I need to update my shopping list:
And I must remember to put the nasty bananes in the freezer!

This morning I decided to use my new CHOCOLATE almond milk for my green monster!
It didn't really affect the color too much, I added six strawberries to the regular recipe.
I filled up two water bottles with it to drink after Crossfit.
After Crossfit, I made myself some scrambled eggs with mushrooms.
I'll be snacking on some Paleo bars with my tea later on this morning. Hope everyone has a great day! :)

Here's the recipe:
Bring to a boil and simmer 20 minutes:
1 c. lentils
2 1/2 c. water
2 beef bouillon cubes (I used chicken instead)
1 bay leaf
1 t. salt
1/4 c. margarine or butter
1 large onion, chopped
1 clove garlic, minced (I used 2)
1 t. salt (may want to skip- salt in the lentils is probably enough)
1-2 T. curry powder
Fry briefly. Combine with lentils and:
2 T. lemon juice
Serve over rice (or nothing if you're doing Paleo/PB)
**So that's the original recipe, I added some carrots & tomatoes to the sauce to give it some OOMPH!

Morning all! :) I've got lots of work to get done today, so I'll get right to it--I made salmon last night--it was so-so.
It does look kinda strange, doesn't it? :) Oh well! Also had a bowl of my curried veggie soup (that's the last of that for awhile! I'm relieved)
I ate a VitaTop after dinner
I'll be relieved when these are gone too! They are just way too tempting for me to keep in the house. And not Paleo/PB so it's better not to have them around.But it was pretty yummy!!! And I had some hobnobs with my tea after dinner too.
I had a hard time sleeping last night, I kept waking up and probably woke up four times in the night. My shoulders and arms are pretty sore from Crossfit yesterday, so I'm going to take it easy today and not go to spin or kickboxing but just take a nice 4-5 mile walk on the trail after dinner.
I made a green monster today with some fresh strawberries that we picked up at Sam's Club last night. It was pretty good!I'm drinking some of Lipton's Cranberry-Pomegranate Green Tea and have some Paleo energy bars for my morning snack.

Dinner tonight is salmon with brussel sprouts. That will be the last of my fresh veggies (besides spinach of course), I HATE running out of produce in the middle of the week.
With my tea I'm having some Paleo Energy Bars
And my snack from yesterday afternoon that I didn't eat. I know I'll be starving this morning after such a rough workout!

My favorite workouts besides Crossfit are kickboxing and yoga (even though I really don't do them as often as I should) My most hated is burpees and bicycle crunches.
