Grain-free Monday

Happy Monday everyone!!!! Hope y'all had a great day, it really just flew by for me!! I'm sitting here in front of Cash Cab and thought it would be a perfect time to update the old bloggerino.

This morning I had a green monster with spinach, banana, strawberries, milk, Amazing Meal Green Superfood aaaaaaand I think that's it!!! It wasn't very sweet since my bananas aren't browning yet and I left out the whey powder to save on extra points.

Needless to say without the extra protein, I got hungry WAY earlier than I usually do!! I packed an apple and didn't realize it was so tiny when I went to eat it. Lucky for me I had stowed away some cottage cheez in the fridge at work! I'm sure y'all can imagine what an apple and cottage cheez look like :P Nothing special.

For lunch I was still mighty hungry and had my planned chili with an egg on top (cooked in olive oil). I added some cheddar cheez and sour cream for the helluvit and it was delightful!!

In order to bulk up my lunch a tad, I made a salade with spinach, carrots, tomatoes, onion and avocado with olive oil & red wine vinegar to dress. It was a perfect lunch!!

This afternoon was a typical extremely uneventful day at the office, I'm taking the evening to relax and paint my toenails. I don't want to push back into Crossfit too hard, so I'm going to go twice this week and more next week. When I got home, I was quite hungry and was glad that I had food ready to go!!! Turkey roast and leftover zucchini, yellow squash & onions.

It was tres nom and I totally scarfed it down!! I made a cup of white chai from Stash

And added a teaspoon of honey and milk.

It's a good thing there aren't any cookies in the house!! They'd go perfectly with my tea. :) BUT would totally ruin my grain-free day!!

For those wondering, I'm currently following Weight Watchers Simply Filling Technique--but incorporating lessons learned from John Velandra about the evils of grains. It's still early days of totally limiting grains, but I've noticed that I'm less bloated in the tum and I just feel SO much better generally!!! When I do eat grains, it will be either oatmeal or whole wheat pasta, just because I love both of them so much!!!

Okay, it's time to put another coat of polish on my little piggies, so I bid you goodnite!! :D

Tuna Wraps & Applesauce

Happy Super Sunday!!!! I hope everyone is having an awesome day so far :) Today is very low-key for the Meggilizz, I'll be going over to my friend's house tonight for a little Super Bowl partaaaay action. It should be fun!!

This morning I slept in just a *tiny* bit but made it to the church on time :P I had a green monster for breakfast.

Today's recipe before blending:

2 handfuls spinach
1/2 banana
1/2 c frozen strawberries
1 T coconut oil*
1 scoop vanilla whey powder*

It was delicious, as usual! After church, I picked up a Starbucks FF latte and went to the store to get some produce that I'd forgotten yesterday afternoon. How can you forget carrots & tomatoes??? I guess you can, and I did. Hmph.

Somehow I found myself with a LOT of extra apples in my fridge and not wanting them to go to waste, I'd normally make apple crisp. But being that is NOT the most healthy option, I went in search for a good recipe for homemade applesauce instead. I smooshed together a few recipes in my head, then kinda just winged it ;)

Meggilizz's Homemade Applesauce

11 apples--mixture of Pink Lady, Red Delicious and Empire
1-2 t brown sugar*
1/2 c water
2 T cinnamon
1 T cloves
1 t nutmeg (I would've added more, but ran out)
1 T olive oil
1/2 T French sea salt

I chunked the apples rather than chopping them b/c I like applesauce more chunky. Put everything in a big pot together, cover and heat on low for 1-2 hours. My stove is pretty hot (even on low heat) so I cooked mine for only about an hour and 15 minutes.

And the finished, delumptious applesauce!


Now I've got a nice supply of applesauce and Mexican-type dishes in my freezer, this blog may get a little repetitive over the next few days folks!!!

For lunch I made a wonderful healthy tuna salad wrap. I mixed together the tuna filling:

1 can white tuna, packed in water
2 t olive oil
1 t mayonnaise*
1 T FF sour cream
Salt, pepper, Bombay Veggie seasoning (luff that stuff!!)
1/2 avocado, mashed up
2-3 T diced onion

Then layered the tuna stuffing with spinach and tomatoes on a Flatout* wrap.

Rolled it up and had it with some baby carrots. :)


Ohhhh babies!!!! This was a truly nomtastic lunch affair!!! I'll probably make up some more tuna filling to have on hand for lunches this week. Perhaps in a pita pocket would be less messy than a Flatout, oui??
