Trip to Raleigh!


Today has been such a great day!! I went to Crossfit for a nice little ass-kicking before I headed up to Raleigh for the day. I met up with my friend Terry for lunch at Neomonde, I got the Neomonde sampler and it was DEEE-LISH-USSSSSSSS!!!!!!!! Let's see, there was baba ganoush, hummus, tabbouli, a whole wheat pita and some walnut baklava for dessert. SOOOOOOO FREAKIN GOOOOOOOOOOOOD!!!!!!!! I really can't wait to go back and get something new!!!

We then took a trip to the mall and I resisted temptation of a fabulous dress at the Limited, I must keep my eye on it to see when it goes on sale!! After dropping some cash at Sephora (le yaaaay!!) we went over to Whole Foods so the Meggilizz could get some grass fed beef!!

I got 10oz of grass fed London Broil and marinated it in soy sauce, Worcestshire sauce, olive oil, garlic and salt & pepper for a few hours before broiling it.

Cooked just about 5 minutes on each side in a VERY hot broiling oven.

I had it for dinner with some leftover brussel sprouts & radishes.

IT WAS SO GOOD!!!!!!!! I can't wait to get back to Raleigh for some more Mediterranean food & grass fed beefmeats!!!!! :D

Roast Chicken

I woke up quite early today and got my chicken ready for the oven before I went to Crossfit!! I decided to cook him long & slow so I wouldn't have to hurry to get back. I rubbed him with olive oil, salt & pepper, stuffed the cavity with apples (was out of onion) stuffed garlic in the skin and put bacon on top!

I cooked him at 300-325 for about 2.5-3 hours and he turned out like this--

The bacon was pretty tasty too ;) I had a nice plate of brussel sprouts, carrots, radishes all roasted together with my chicken for dinner. FANTASTIC!!!!!
I'll be making soup out of the carcass sometime this weekend.
